Christmas Chocolate-Cardamon Truffles
Yes, it’s been 19 days since Christmas but hey, Christmas is still very much in the air. That said, I’d like you to try this Christmas Chocolate Cardamon Truffles recipe.
Ingredients:
1 2/3 cups nuts of choice (my favourites are walnuts and almonds)
1 cup shredded old coconut (or desiccated coconut)
1/2 cup raisins
1/2 cup goji berries
1/2 TBS maca powder
1/2 TBS coconut sugar (optional)
1 1/2 TBS cacao powder
2 TBS carob powder
1/2 tsp nutmeg
1/2 tsp cardamon
3 tsp coconut oil
Process all ingredients until crumbly. Shape into small, round balls, and dust with ground nuts, shredded coconuts, or top with goji berries for a Christmas feel. This recipe makes 36 small truffles and will keep for 4 to 5 days in the refrigerator and a few weeks in the freezer. Enjoy as dessert or snack!
