Cucumber-Banana Smoothies

It’s my first website working day today and as promised last year, I will challenge you to eat one raw meal every Tuesday and we shall call it Raw Food Tuesdays!

To start the year right and to clean-up all the Holiday mega eating we’ve done (me included), how about we make Cucumber-Banana Smoothies?  This is perfect for breakfast, lunch, dinner, or even during snack.  And it’s a no sweat 5-minute recipe.

Here it goes… You’ll need:

Cucumber-Banana Smoothies

1 medium-sized cucumber, cut into small pieces

2 large bananas

a handful of greens

water

1/2 TBS coconut oil (Optional.  It is not always best to combine sweet fruits with fats.)

spice of your choice (Optional but I personally like using cardamon if I want something with a gingery taste or raw cacao and cinnamon for something sweet.)

Place cucumber, bananas, and greens in a blender and cover with just enough water.  Too much water will make it too thin and too little will make the juice too thick.  The best measurement is always just use enough to cover all the ingredients.  Blend for a few seconds and add in the coconut oil and spices.  Blend some more.  Serve and enjoy!
